  • 1 small butternut squash (about 750 grams/26.5 ounces)
  • 12 slices of smoked bacon
  • 2 rosemary or thyme sprigs
  • 4 garlic cloves
  • 1 tablespoon coriander seeds

This delicious squash side dish is the perfect fall treat, sure to leave you warm and satisfied. The marriage of the crispy, smoky bacon and tender, slightly sweet squash will leave your guests clamouring for more.


Roasted Butternut Squash with Smoked Bacon Directions

Preheat oven to 320°F.

Wash and dry the small butternut squash. Cut it in 4 and remove the seeds and fibres. Place them in an oven dish. Season with salt (lightly) and pepper from the mill. Wrap the pieces of squash with 3 slices of smoked bacon each. Add some rosemary or thyme sprigs on the dish, the unpeeled garlic cloves and the crushed coriander seeds.

Sprinkle with olive oil and cook for 1 hour or until tender.

To crush the coriander seeds, you can use a pestle and mortar, a spice/coffee grinder, the heavy bottom of a glass, or saucepan
