Shorter menus are now in demand as they are more appealing to consumers, especially millennials. There is also a high demand for quality and low cost ingredients. The shorter menu gives restaurant owners an opportunity to introduce seasonal ingredients. By finding the right supply channels, you can introduce the “Cuisine du marché” concept where you buy seasonal ingredients at their best prices and increase your profit margin.

Avoid cheesecakes and molten dark chocolate for dessert or anything with a lot of processed sugars. There are many other options that are lighter and fresher. Your customers will likely enjoy delicious seasonal fresh fruit desserts such as strawberry melba, fruit tartlets and clafoutis. Other options to try include a pineapple basil salad, or a peach champagne gratin, among other options.

These seasonal options are excellent choices for hot summer days and nights and are perfect for enjoying on a patio under the summer sun.
