Note: Gift certificates are issued for a specific person. Other participants will be considered as guests. All participants will take the class at the same time and same location.

This is where it all starts. Learn how to handle a knife with dexterity and skill to safely improve your efficiency in the kitchen. Chef Eric will take you through basic and advanced vegetable cuts while you prepare a great vegetarian meal to share with him. Become faster and more accurate with your knife work, and create dishes that look truly professional. You will also learn how to care for your knives and how to properly sharpen them.

Making a good stock may look quite easy, but creating a truly great stock is another story. Stocks are used to prepare sauces, soups, and as a braising and cooking medium for vegetables and grains. A tasty stock is what will make or break your dish; indeed, it is the signature of a great chef. This class covers cooking stocks fundamentals. Learn to make a white and a brown stock, and then use these stocks to make basic sauces, called the mother sauces. This will allow you to practice key techniques of the French culinary art of sauce-making. For example, you will see one of the sauces to make a delicious cheese souffé for your meal. At the end of the class you will have several great stocks and sauces to enjoy and store for later.

This class will enchant pasta lovers, as you will learn the art of making different types of pasta dough to help craft Lasagna Al Forno, Herb Printed Stuffed Raviolis, Fettuccini with Spicy Shrimp and Potato Gnocchi with Pesto Sauce. Loaded with useful information, learn how to craft the very best pasta by hand or with a machine in your own kitchen.

Facing a restaurant crisis is a difficult event since such occurrences can jeopardize your brand reputation and the very future of your business. Don’t go it alone-- at 911 Chef Eric we will study your case inside and out, make recommendations and put together specifically designed action plans, helping you with damage control, communications, and ultimately the resolution of your crisis.

Even a great sauce alone doesn’t make a dish. You need a great quality protein cooked to perfection. When you have all three (technique, sauce and protein) then you have an amazing dish. This class will teach you how to achieve that; French cooking as its best. Learn about different cuts of meat to apply to pork, beef, veal and lamb, and some of the most important cooking techniques. Apply the appropriate cooking methods for each cut, and make mouth-watering sauces to accompany your creations. Your menu will include: Pan Fried Pork Chop with Charcutiere Sauce, Perfect Roast Beef Marchand de Vin Sauce, Veal Blanquette “a l’Ancienne” and Grilled Lamb Chops Béarnaise Sauce.

Discover the basics of selecting, dressing, cleaning, and cooking sustainable fish and shellfish. Learn to clean mussels and make Steamed Mussels Basquaise Style. Safely shuck oysters, make a classic mignonette sauce for them, and learn how to properly serve these delicacies. Filet a round fish, and explore a variety of different cooking methods. Make a stunning appetizer with a gourmet fish tartar. Learn how to make a court-bouillon and implement the poaching principles. Serve your poached fish with a delicious Beurre Blanc. Finish the class with a very French fish cooking method “à la meunière.”

Under Chef Eric's guidance, you'll spend half the class cooking and half the class garnishing, plating and enjoying the tasty, fine dining quality meal you have prepared. The recipient picks the theme of the class from Chef Eric’s menu options. Add a French, Asian or other unexpected culinary twist to your next special event!

This professional chocolate course gift certificate, consisting of three consecutive days’ classes, is suitable for professional chefs and amateurs with a keen interest in making quality chocolate bonbons. You will be guided every step of the way by Chef Eric, who is a graduate of the Barry Callebaut Chocolate Academy in Montreal.
